Huckleberry is more than a place to pick up a cake or an afternoon coffee. It is the kind of space for gathering, celebrating special moments, studying, catching up with friends, or treating yourself to something sweet on an ordinary day. From gourmet cakes, pastries, Chunkie Cookies and cheesecakes to coffee, café-style drinks, sandwiches, and rotating weekly specials, Huckleberry blends comfort with creativity while focusing on quality ingredients and presentation. The menu is constantly evolving with new flavours, unique desserts, and seasonal items while still keeping familiar favourites the customers love.
 For Ria, baking has always been about more than desserts. Before opening Huckleberry Cakes & Coffee, she worked in several areas of the food industry, including culinary management, professional kitchens, and nutrition management. Through every role, baking remained the constant – something she continually returned to because of the joy desserts bring to people. As a mom of two who has called Aylmer home for several years, Ria noticed something she felt the town could use: a cozy café space where people could gather, relax, and enjoy quality desserts in a welcoming atmosphere. So, she built one. Starting this business came with long nights, challenges, and plenty of learning curves, but the vision of Huckleberry stayed the same: create a warm, welcoming café filled with personality, creativity, and comfort. With one look at Huckleberry’s menu, it becomes clear that creativity plays a big role in the kitchen. Most items are made fresh in-house in small batches, with time spent testing recipes, balancing flavours, and making sure every dessert looks just as special as it tastes. Alongside familiar favourites, the menu evolves with new flavours, seasonal items, and rotating weekly features that keep customers coming back to see what’s next. Among the bakery’s growing lineup, one standout has developed a loyal following: the Chunkie Cookie line. These thick, stuffed gourmet cookies are made fresh in-house and packed with creative flavours – and they are only the beginning. Looking ahead, Ria hopes to eventually expand the Chunkie Cookie line beyond the local community, with dreams of one day offering shipping. Another menu item close to Huckleberry’s heart is the banana pudding, a recipe that has been perfected over time that customers continue to rave about – many claiming it’s the best they’ve ever had. Still, while the desserts may draw people in, Ria believes what makes Huckleberry special goes beyond the menu itself. “We genuinely care about the customer experience,” she shares, “from the smallest dessert detail to the atmosphere of the café itself.” That customer connection is also what keeps Ria motivated day to day. Seeing customers excited about new desserts, returning for a favorite treat, or creating memories in the café continues to inspire the work behind Huckleberry. Creativity plays an equally important role. From developing new menu items to experimenting with flavours and seasonal ideas, Ria loves finding new ways to keep the menu fresh while staying true to the spirit of the café.
In the short year they’ve been open, Huckleberry Cakes & Coffee has become a familiar and beloved part of the Aylmer community. Having recently celebrated its first anniversary, Huckleberry Cake & Coffee continues to grow into the cozy café Ria first imagined. For Ria, some of the most rewarding moments come from seeing customers return again and again – seeing the café become a recognizable and loved part of the community. Watching people meet friends over coffee, celebrate birthdays with their cakes, and bring their families into the café has made every challenge Huckleberry has faced worth it. “The support from the community,” Ria explains, “has been overwhelming in the best way possible.” From daily coffee stops to social media shares and recommendations passed between friends, every bit of support has helped the business continue to grow. As a small local business built with passion, hard work, and many long nights, community connection remains deeply important to the Huckleberry team. Through local events, collaborations, and creating a welcoming space to gather, they hope to give back to the town that has embraced them.  If Ria could offer one piece of advice to someone thinking of starting their own business, it would be simple: start before you feel fully ready. “You will never have everything perfectly figured out in the beginning, and that’s okay” she says. “Trust yourself more and don’t be afraid to take the first step.” She also feels the power of community and kindness is important as genuine relationships with customers and other local businesses are impactful. It is this advice that reflects in Huckleberry itself – built through creativity, persistence, and believing in an idea before every detail was perfectly in place. Today, Huckleberry Cakes & Coffee continues growing into the cozy café Ria first imagined: a place where people can gather, celebrate, slow down, and enjoy something made with care.
