"The inspiration really comes from moments in life," Matt says. "Art inspires me. Sports. People. And somehow, that turns into ice cream." He layers flavours like a music producer samples beats, blending the unexpected until it sings. One of his proudest creations, Goth Babe, combines charcoal, dandelion, and lemon. It's a balancing act that requires coaxing floral and herbaceous notes out of ingredients most wouldn't even consider dessert-worthy. And there's more in his mental recipe book, like spruce tip and blueberry (with maybe a touch of gin), or even caramelized onion. Yes, caramelized onion ice cream. "You'd be surprised what sweet and savoury can do together," he grins. (Try his pear, prosciutto, and blue cheese flavour for proof. It's a revelation. Chicken and Waffles is also a mind-bending delicacy). A Decent Philosophy But Matt isn't here to win awards or chase trends. His goal is simpler. And far more charming. "I'm not trying to make the best ice cream anyone's ever had," he says. "I'm making really unique, very decent attempts at fun ice creams."
